Upscale sushi restaurant’s renowned for the cuts handiwork of owner Jun Sakamoto, who also designed the interior. Long, leather banquette makes customers equal; for personal service at a higher price, seating at sushi counter gets the honor of being served by the master himself. Wood takes priority but traditional Japanese aesthetics are thrown out after that; no lucky cat or decorative flag trimming in sight.
