Sao Paulo’s first all-organic bakery melds owner Rafael Rosa’s globe-trotting experience in the hospitality business with a refined take on traditional faves, like the Brazilian pao de queijo made so light it could almost fly. Other goodies, including a 70% Belgian chocolate cake, are distinctly American- and Euro-flavored. Emphasis is on taste and not on size; place is smaller than some cubicles, if they were all chromed out and walled over in dark wood, that is. Close quarters brings out the chatty in patrons who stand and eat when the four chairs are full, scoping out bakery chef as he bakes bread and mixes flour and eggs. Photo: Crispin R. Cairns
